Matcha Elixir Pancakes with Greek Yoghurt & Blackberries: A Hormone-Supportive Breakfast

Ingredients

¾ cup oat flour

1 tsp matcha powder

1 scoop Fertile You Hormone Elixir (natural or lemon)

1 tsp baking powder

½ cup plant-based milk
-
1 tbsp maple syrup or honey

1 tsp vanilla extract
-
1 egg (or flax egg if plant-based)

Pinch of salt
Toppings

2 tbsp Greek yoghurt
-
A handful of blackberries

Optional: chia seeds, hemp seeds, or a drizzle of almond butter
Instructions

In a bowl, whisk together the flour, matcha powder, baking powder, salt, and Hormone Elixir.

In a separate bowl, mix milk, egg (or flax egg), maple syrup, and vanilla.

Combine wet and dry ingredients to form a smooth batter.

Heat a non-stick pan with a little oil. Pour in ¼ cup of batter per pancake and cook until bubbles form on the surface. Flip and cook the other side.

Serve with Greek yoghurt, blackberries, and your favourite superfood toppings.
