Matcha Elixir Pancakes with Greek Yoghurt & Blackberries: A Hormone-Supportive Breakfast

Ingredients

  • ¾ cup oat flour 

  • 1 tsp matcha powder

  • 1 scoop Fertile You Hormone Elixir (natural or lemon)

  • 1 tsp baking powder

  • ½ cup plant-based milk 

  • 1 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • 1 egg (or flax egg if plant-based)

  • Pinch of salt

Toppings

  • 2 tbsp Greek yoghurt

  • A handful of blackberries

  • Optional: chia seeds, hemp seeds, or a drizzle of almond butter

Instructions

  1. In a bowl, whisk together the flour, matcha powder, baking powder, salt, and Hormone Elixir.

  2. In a separate bowl, mix milk, egg (or flax egg), maple syrup, and vanilla.

  3. Combine wet and dry ingredients to form a smooth batter.

  4. Heat a non-stick pan with a little oil. Pour in ¼ cup of batter per pancake and cook until bubbles form on the surface. Flip and cook the other side.

  5. Serve with Greek yoghurt, blackberries, and your favourite superfood toppings.
