
Blueberry Glow Cheesecake with Fertile You Elixir (Dairy-Free & No-Bake)
Ingredients
For the Base:

1 ½ cups almonds or walnuts

1 cup pitted dates (softened in warm water if firm)

Pinch of sea salt
For the Blueberry Glow Filling:

1 cup cashews (soaked overnight or 4 hrs)
-
1 cup dairy-free thickened cream (coconut-based works best)

¼–½ cup frozen blueberries (thawed, drained, and patted dry)

2–3 tbsp maple syrup (or sugar-free syrup)
-
1 tsp vanilla extract
-
2 tbsp lemon juice
-
1–2 scoops Fertile You Female Elixir
Method

Prepare the Base
In a food processor, pulse nuts, dates, and salt until sticky and crumbly.
Press firmly into a lined cake tin to form the base. Refrigerate while you prepare the filling. -
Blend the Filling
In a blender, combine soaked cashews, thawed blueberries, maple syrup, vanilla, and lemon juice. Blend until smooth and creamy. -
Whip the Cream
In a separate bowl, whip the dairy-free thickened cream until soft peaks form. -
Combine & Add Elixir
Gently fold the cashew-blueberry mixture into the whipped cream. Stir in 1–2 scoops of Fertile You Female Elixir until evenly combined. Taste and adjust sweetness or colour (add more blueberries if desired). -
Set the Cheesecake
Pour the filling over the prepared base. Smooth the top with a spatula.
Chill in the fridge for at least 4 hours (or overnight) until set. -
To Serve
Slice and enjoy as a nourishing, pastel-hued dessert. Top with extra blueberries if desired.
