Green Glow No-Bake Cheesecake (With Hormone-Supporting Ingredients)

Base Ingredients:

  • 250 g raw almonds

  • 200 g medjool dates (pitted)

  • 30 g shredded coconut

  • Pinch of sea salt

  • 1–2 tsp warm water or melted coconut oil (to help blend if needed)

Filling Ingredients:

  • 150 g cashews (soaked in hot water for 2+ hours, then drained)

  • 120 ml coconut cream (from the top of a chilled can)

  • 80 ml maple syrup

  • 40 ml lemon juice

  • 2 tbsp melted coconut oil

  • 1 tbsp Fertile You Hormone Elixir

  • ¾ tsp matcha powder

  • Small handful of baby spinach (start with ⅓ cup packed for colour)

Topping (optional):

  • Crushed pistachios

 

METHOD:

  1. Prepare the base:
    Blend almonds, dates, coconut, salt, and water/oil until sticky. Press into a lined loaf tin and freeze.

  2. Make the filling:
    Blend soaked cashews, coconut cream, maple syrup, lemon juice, coconut oil, Hormone Elixir, matcha, and spinach until smooth and vibrant green.

  3. Assemble:
    Pour filling over the base and smooth the top. Add toppings.

  4. Freeze:
    Freeze for 4–6 hours or until set. Let thaw slightly before slicing and serving.
