Method
- Preheat oven to 180°C and line a baking tray with baking paper.
- Arrange wholegrain or gluten-free crackers in a single layer on the tray.
- In a saucepan over medium heat, melt grass-fed butter or coconut oil with coconut sugar or maple syrup, stirring until smooth and gently bubbling.
- Pour the caramel mixture evenly over the crackers, spreading gently to coat.
- Bake for 8-10 minutes until bubbling and lightly caramelised.
- Remove from the oven and immediately sprinkle dark chocolate (70% or higher) over the top. Allow it to melt, then spread evenly.
- Sprinkle with dried cranberries, shredded coconut and a pinch of flaky sea salt.
- Allow to cool completely, then break into pieces and enjoy.
