
Hormone-Loving Pumpkin & Sweet Potato Soup for Gut Health and Cycle Support

Ingredients:

1 tbsp olive oil or ghee

1 small brown onion, chopped
-
2 garlic cloves, minced
-
1 tbsp fresh ginger, grated

1/2 tbsp fresh turmeric (or 1 tsp dried)

1/2 medium butternut pumpkin, peeled and cubed
-
1 medium sweet potato, peeled and cubed
-
3 cups water + 1 stock cube (or plain water and add miso at the end)

1/2 cup full-fat coconut milk
-
1–2 tsp miso paste (add after blending)

Sea salt and pepper to taste

1 tsp Fertile You Hormone Elixir stirred in once cooled
Method:

In a large pot, heat oil over medium heat. Add onion and garlic, cook until soft.

Add ginger and turmeric, stir until fragrant.

Add pumpkin and sweet potato. Stir well.

Pour in the water + stock cube (or plain water). Bring to a boil, then simmer for 20–25 mins until vegetables are soft.

Blend until smooth using a stick blender or standard blender.

Stir in coconut milk. Let cool slightly, then stir in miso paste.

Taste and adjust seasoning.

Serve with a swirl of watered-down cream cheese (or yoghurt), toasted pumpkin seeds, and a side of sourdough bread.
