Hormone-Supporting Carrot Cake Energy Balls
A nourishing twist on carrot cake naturally sweet, full of texture, and designed to support your hormones from the inside out.
Ingredients
- 140g raw carrots, finely grated
- 130g pecans
- 90g almond meal
- 70g shredded coconut (+ extra for rolling)
- 220g medjool dates, pitted
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp Himalayan salt
- 1–2 tbsp maple syrup (optional, depending on sweetness preference)
- 1 tbsp Fertile You Hormone Elixir
Method
- Add pecans to a food processor and pulse until roughly crumbed.
- Add grated carrot, almond meal, coconut, dates, spices, and salt.
- Blend until the mixture starts to come together into a sticky dough.
- Add the Hormone Elixir and maple syrup (if using), then blend again until fully combined.
- Roll into bite-sized balls using your hands.
- Coat in extra shredded coconut for texture.
- Store in an airtight container in the fridge for up to 5 days.
