Hormone-Supporting Maple Cinnamon Chai Granola

Ingredients



– 300g rolled oats

– 100g pecans, roughly chopped

– 50g pumpkin seeds

– 50g shredded coconut

– 2 tsp cinnamon

– 1 tsp ground cardamom

– ½ tsp nutmeg

– ½ tsp ground cloves

– 1 tsp sea salt

– 100–120ml maple syrup

– 100ml melted coconut oil

– 1 tsp vanilla

– 70–100g dried cranberries

 


Method



  1. Preheat oven to 160°C (fan-forced).
  2. In a large bowl, combine oats, pecans, pumpkin seeds, shredded coconut, spices and sea salt.
  3. In a separate bowl, whisk together maple syrup, melted coconut oil and vanilla.
  4. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated and glossy.
  5. Spread the mixture evenly onto a lined baking tray.
  6. Bake for 25–30 minutes, stirring halfway through, until golden and fragrant.
  7. Allow to cool completely (this is key for crunch), then fold through dried cranberries.
