
Lemon & Poppy Seed Crepes with Berry Elixir Compote; A Hormone-Loving Brunch to Support Fertility Naturally
Ingredients
Crepes

Zest of 1 lemon

1 tbsp lemon zest

5 eggs

¾ cup almond milk (or skim milk)

¼ cup raw honey or pure maple syrup

¾ cup lemon juice
-
1 cup wholemeal flour
-
1½ tbsp poppy seeds

¼ tsp sea salt
-
3 tbsp coconut oil (melted, for batter and pan)
Filling
-
1 cup coconut yoghurt
-
1 tsp vanilla extract (optional)

Extra lemon zest to serve
Fertile You Berry Compote

1 cup mixed berries (fresh or frozen)
-
1 tbsp Fertile You Female Elixir Mixed Berry
-
1 tbsp raw honey or maple syrup
-
1 tsp chia seeds (optional, to thicken)
Method

Make the Batter
In a large bowl, whisk together eggs, milk, lemon juice, honey, melted coconut oil, and lemon zest.
Add the wholemeal flour, poppy seeds, and salt. Mix until smooth and lump-free. Let rest for 10–15 minutes. -
Cook the Crepes
Heat a non-stick pan over medium heat and lightly grease with coconut oil.
Pour in a thin layer of batter and swirl to coat evenly.
Cook for 1–2 minutes per side until lightly golden. Stack and keep warm. -
Prepare the Berry Compote
In a small saucepan, combine berries, honey, and chia seeds.
Simmer over low heat for 5–7 minutes until the mixture thickens.
Remove from heat and stir in 1 tbsp Fertile You Elixir once cooled slightly to preserve nutrients. -
Assemble & Serve
Spread coconut yoghurt over each crepe, drizzle with berry compote, and fold or roll.
Garnish with extra lemon zest and a spoonful of compote on top.
