Ingredients

For the Pancakes

  • 1 cup wholemeal flour

  • 1 tablespoon matcha powder (high quality)

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • 1 egg

  • 1 cup milk of choice (or more to thin)

  • 1 tablespoon maple syrup or honey

  • 1 tablespoon coconut oil, melted

  • 1 tablespoon Fertile You Elixir (Hormone or Female — either works)

  • Pinch of salt

For the Berry Compote

  • 1 cup frozen mixed berries

  • 1 tablespoon lemon juice

  • 1–2 teaspoons maple syrup or honey

  • 1 tablespoon water

  • Optional: ½ teaspoon chia seeds for thickening

To Serve

  • Fresh blueberries

  • Greek yoghurt or coconut yoghurt

  • Extra drizzle of elixir (optional)

Method

1. Make the Berry Compote

  1. Add berries, lemon juice, sweetener, and water to a small saucepan.

  2. Simmer on low heat for 5–7 minutes until the berries soften and thicken.

  3. Add chia seeds if you want a thicker texture.

  4. Set aside.

2. Make the Matcha Pancakes

  1. In a bowl, whisk together wholemeal flour, matcha, baking powder, and salt.

  2. In a separate bowl, whisk egg, milk, melted coconut oil, maple syrup, vanilla, and Fertile You Elixir.

  3. Combine wet and dry ingredients, mixing until just smooth. Avoid over-mixing.

  4. Heat a non-stick pan and pour batter into small rounds.

  5. Cook 2–3 minutes per side until bubbles form and edges are set.

  6. Repeat until all pancakes are cooked.

3. Assemble & Serve

Stack warm pancakes, spoon berry compote over the top, add yoghurt, fresh blueberries, and an optional drizzle of elixir for an extra wellness boost.
