Spinach Banana Bread with Matcha Miso Butter & Berry Jam

We are so excited to share this week’s Wellness Wednesday recipe a nourishing twist on a classic loaf. This spinach banana bread is soft, wholesome, and nutrient-packed, perfect for steady energy and cycle support. It’s not just banana bread, it’s elevated with hormone-friendly sides: matcha miso butter and a homemade blueberry & raspberry jam.

 

Ingredients

For the Spinach Banana Bread

  • 2 cups wholemeal flour (or spelt flour)

  • 1 tsp baking soda

  • ½ tsp cinnamon

  • ¼ tsp salt

  • 3 ripe bananas, mashed

  • 1 cup fresh spinach, finely chopped or blended

  • 2 eggs (or flax eggs for vegan option)

  • ¼ cup olive oil or coconut oil

  • ¼ cup honey or maple syrup

  • 2 tbsp hemp seeds

  • 1 tsp vanilla extract

For the Matcha Miso Butter

  • 100g unsalted butter, softened

  • 1 tsp matcha powder

  • ½ tsp light soybean miso paste

  • 1 tsp honey (optional)

For the Berry Jam

  • 1 cup fresh or frozen blueberries

  • 1 cup fresh or frozen raspberries

  • 2 tbsp water

  • 2 tbsp honey or maple syrup

 

Method

  1. Make the Banana Bread

    • Preheat oven to 180°C and line a loaf tin with baking paper.

    • In one bowl, mix flour, baking soda, cinnamon, and salt.

    • In another, whisk mashed bananas, eggs, oil, honey, spinach, and vanilla.

    • Combine wet and dry ingredients, fold in hemp seeds, and pour into the tin.

    • Bake for 45–50 minutes until golden and a skewer comes out clean.

     

  2. Prepare the Matcha Miso Butter

    • Whisk softened butter with matcha and miso until smooth.

    • Add honey for sweetness, if desired.

    • Chill until ready to serve.

     

  3. Cook the Berry Jam

    • Place berries, water, and honey in a small saucepan.

    • Simmer for 10–15 minutes until thickened, stirring occasionally.

    • Let cool before serving.

     

 

How to Serve

Slice the spinach banana bread warm or toasted. Spread with matcha miso butter for an antioxidant kick or top with berry jam for fertility-boosting sweetness. Or go all in and try both for the ultimate hormone-loving breakfast or snack.
